Instant dry yeast (saccharomyces cerevisiae), is one kind of single cell microorganism, protein content about 50%,also have high amino acid content and vitamin content. Mainly used as fermentation and nutrition agent for bread and cake making.
According difference sugar content in dough, there are 2 kinds of yeast: low sugar yeast and high sugar yeast. Low sugar yeast used for making salty bread or non-sweety bread, sugar content in dough below than 7%; high sugar yeast used for making sweety bread, sugar content in dough more than 7%.

Applications
Bread
Low sugar Yeast used for making non-sweety bread or salty bread, which sugar content in dough is 0-7%. High sugar Yeast used for making sweety bread which sugar content in dough above 7%.
Pita (Arabic bread)
Pita (Arabic bread) is very popular in Arabic countries, and it mainly need the low sugar yeast, which can keep pita good taste and high nutrition.
Other cooked wheaten foods
Yeast also can used in many other cooked wheaten foods, like biscuit, cake, etc.
Yeast not only make the dough fermentated fully, but keep the cooked foods good taste and high nutrition.
Usage of Instant Dry Yeast
Step 1.
Mix yeast with flour with ratio of 0.8%-1%
Step 2.
Add warm water into the flour and stir it, water keep in 30℃.
Step 3.
Stir the dough then put it into a vessel and keep the temperature in 30℃.
20 minutes later.
Fermentation begining.
30 minutes later.
Fermentation continue.
40 minutes later.
Fermentation finished.
